I was thinking about my dear neighbor the other day after the bank she works at was robbed. This was a big scare for our town of about 500, and not only did my neighbor work at this bank, but three of my high school classmates' mothers worked at this bank as well. Thankfully, no one was hurt, but it scared the entire community.
Bottom line: These neighbors are great cooks. I already shared with you a meat marinade recipe from the Mister, and now I'd like to share a hearty recipe (that's perfect for a holiday potluck!) from the Misses.
Sweet Potato Praline Casserole
You'll need:
3 large eggs
6 c. cooked, mashed sweet potatoes
2/3 c. sugar
2/3 c. butter, melted
1/3 c. heavy cream
1 t. vanilla
1/2 t. nutmeg
1/2 t. allspice
Topping:
1/3 c. flour
1/3 c. butter, cut into small pieces
1 c. light brown sugar
1 c. chopped pecans
Directions:
- Heat the oven to 350 degrees, grease a shallow 2-quart baking dish.
- Beat eggs in a large bowl, then stir in potatoes until blended.
- Add remaining ingredients (except topping ingredients); mix well.
- Spread this mixture in the greased baking dish.
- For the topping, mix the sugar, four and nuts in a medium bowl.
- Work in the butter with your hands until well blended.
- Sprinkle this over the potato mixture.
- Bake at 350* for 60-70 minutes until well-browned and bubbly.
