Two of my people are Linda and Diana. And they rock! Linda is a special education teacher and we work very closely together on a daily basis. Diana is a Spanish teacher, and she's a native speaker. We also carpool together about three days a week. Diana and Linda make some great treats at work potlucks, and at the end of every school year Linda and her husband host a little party to celebrate the start of summer.
To do them some justice, I want to share a few of their recipes with you.
Linda's Sloppy Joes
You'll need:
1/2 lb of ground beef
1 finely chopped onion
1 finely chopped green pepper
2T sugar
2T mustard
1T vinegar
1t salt
1c. ketchup
Directions:
Brown meat and veggies. Add remaining ingredients and simmer 30 minutes. Serve on toasted buns. Enjoy!
Diana's Shortbread
You'll need:
2 c. flour
1 c. butter
1/2 c. powdered sugar
1/4 t. salt
1/4 t. baking powder
1 t. vanilla or almond extract
2 T. sugar (for the top)
Directions:
- Mix flour, salt and baking powder.
- In another bowl, mix butter, vanilla and powdered sugar. When soft, add cup-by-cup the dry ingredients until all are incorporated.
- Put in a pie mold and extend it. With a fork, poke a few holes and sprinkle the sugar.
- Bake for 25 to 30 minutes in a 375 degree oven, or until golden brown. Enjoy!
