Freezer Cookin' on a Saturday Night.

This Labor Day weekend I decided to devote a few hours of my Saturday evening to cookin' up a few meals for the freezer.

My hope is that not only will a little leg work now save me time in the long run during weeknights, but that I'll save some money as well.


Because when I come home from work (after a 12-hour day including my commute, mind you) I don't usually feel like cooking. And John doesn't cook. So we usually grab some take out or visit a local cafe. This isn't so friendly on our wallets, and we've already noticed that many of our favorite cafes are starting to raise their menu prices as a result of the drought. Going out to dinner on a weeknight costs over $25. For two people.

This ain't right, guys.

So I made up eight different meals that are simple to cook after a busy workday - so simple that even John can handle it.

I chose meals that required a little bit of prep work now, and when ready to eat all we have to do is take one out of the freezer the night before and then pop it in the oven at 350 for 30-40 minutes the day of. Fool proof, just for John.

Here's what I made: 
Pizza Pasta Casserole
Spaghetti Bake x2
Cheesy Tater Skins x2 (this was also leftover from a meal I had made earlier)
Lasagna Roll Ups
Lasagna x2

I'll post recipes of the Spaghetti Bake and Pizza Pasta Casserole later. I've made both of them before and we really liked them.

The only downfall of this whole process was clean up. Seriously.

This part sucked.
