What a lovely weekend we had! Among the Wellness Fair at New Pioneer Food Co-op and the Backcountry Film Festival at Indian Creek Nature Center, John and I were busy...but in the best possible way. If you follow us on Instagram, you pretty much got a play-by-play of our fun-filled Saturday!
On Sunday we spent some time hiking in the woods.
It was absolutely delightful, even if the temperature was in the 30s and the sun was nowhere to be found. I am determined to enjoy the remains of this winter season.

In this week's meal plan (which is sometimes a photo of our menu board in our kitchen, sometimes a screenshot of my Real Plans, sometimes a simple list with links to recipes), you'll find several homegrown or local item from our urban homestead. Of course, there will be a few repeats throughout the week since we try to eat in-season and lots of leftovers for lunch. Breakfast is usually a smoothie or steel cut oats; something that can be prepared quickly in the morning.
Monday - Tilapia with a Panko/parmesan crust and steamed broccoli
Tuesday - Meatballs with marinara sauce. I am gonna load the marinara sauce with veggies and mushrooms.
Wednesday - Homemade pizza with beef, mushrooms, peppers, and onions
Thursday - Veggie stir fry with a peanut sauce and brown rice
Friday - Oven baked, bone-in chicken breast with steamed mixed veggies
Saturday - Slow cooker beef roast with carrots, celery, and onions
Sunday - Salmon with a mustard glaze and leftover veggies
