It's Monday, and you made it through the weekend, friends! Did you have an exciting couple of days off? John and I are dog sitting for a trio of awesome pups just down the street, so we stayed close to home. Amid some home projects (remember, we're selling our beloved urban homestead!), we attended the wedding of a family friend and spent Sunday hiking in one of our favorite spots.
Manny, like always, managed to find the nastiest smelling shit (yes, literally, a pile of feces) to roll in. What is awesome about it is that he shoulder dives into the smelly stuff, so he always gets these shit streaks on his neck and shoulders.
He did have a good time playing the the water, and John and I enjoyed the sunshine and crisp air. Bruce didn't enjoy anything, because he generally hates life.
I'm kidding. Bruce loves some things, like John. And that's about it.
In this week's meal plan (which is sometimes a photo of our menu board in our kitchen, sometimes a screenshot of my Real Plans, sometimes a simple list with links to recipes), you'll find several homegrown or local item from our urban homestead. Of course, there will be a few repeats throughout the week since we try to eat in-season and lots of leftovers for lunch. Breakfast is usually a smoothie or steel cut oats; something that can be prepared quickly in the morning.
Monday - Toasted PB&J and an apple kale salad
Tuesday - We're teaching an urban farming series, so dinner will likely be homemade frozen pizza
Wednesday - Tilapia over quinoa with steamed veg
Thursday - Breakfast burritos
Friday - Black bean enchiladas
Saturday - Chicken legs and an apple kale salad
Sunday - Leftovers from my sister's bridal shower
