Week of 10/24 - Urban Homestead Meal Plan

Praise the Lord. For the first time in 3 weeks, we are able to be home for dinner 4 out of 5 weeknights. This is such a rare luxury that I don't know whether to laugh or cry. You would think in honor of that I would be planning some elaborate meals, but I am actually going to keep it simple so we can manage to enjoy some of the beautiful Iowa fall weather. In the last 3 weeks we haven't been able to enjoy much of that either.

Maybe I do want to cry...

In this week's meal plan (which is sometimes a photo of our menu board in our kitchen, sometimes a screenshot of my Real Plans, sometimes a simple list with links to recipes), you'll find several homegrown or local item from our urban homestead. Of course, there will be a few repeats throughout the week since we try to eat in-season and lots of leftovers for lunch. Breakfast is usually a smoothie or steel cut oats; something that can be prepared quickly in the morning. 

Monday - Grilled chicken and spiced butternut squash
Tuesday - We're teaching an urban farming series, so dinner will likely be a homemade frozen pizza
Wednesday - Steak, onion, pepper, and mushroom kabobs on the grill with seasoned rice
Thursday - Egg sandwiches and fruit
Friday - Homemade pizza using any veggies and meat from the fridge
Saturday - Grilled cheeseburgers (bunless) with steamed veggies from the freezer
Sunday - Tuna melts and roasted veggies (sweet taters, onions, peppers, mushrooms, etc.)
