Salads don't need to have lettuce: The Santa Fe Bean & Corn Salad

When I am in the mood for a culinary luxury, I head to the deli cooler case at my favorite food co-op. They have so many fresh salads and side dishes, as well as heat-and-serve main dishes. Because our local co-op uses fresh, local, non-gmo, organic ingredients we know we are consuming the best quality foods that also taste amazing. (Read their Quality Standards here)

So, yeah, I'm sure you can see why this is a 'culinary luxury' for us. We are a frugal couple, which means these treats aren't in our budget each week.

One of my favorite side dishes from our food co-op is a Sante Fe Corn and Black Bean Salad. We can purchase a pint (or so) for about $7. This is a little steep for me, but it's sooooo delicious. Spicy, savory, fresh, and with enough fiber to fill us up.

Our co-op is a member of a larger food co-op organization, and some of their recipes are listed online. I was really happy to find the Sante Fe Corn and Black Bean salad online. I made just one tweak to the recipe to fit our tastes, and was amazed that it indeed tastes just like the salad from our co-op's deli cooler.

Here's the original recipe, and here is my slight adaptation -

Whisk the following together in a medium sized bowl:
  • 1/8 cup olive oil
  • 1/4 cup fresh lime juice (do not use bottled; you will regret it)
  • 2 T chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (while this is optional, we highly recommend it)
Then add the following:
  • 2 cups black beans (canned or dried, as long as they've been cooked through)
  • 1 cup corn (we used frozen from last summer's garden)
  • 1/2 of a green bell pepper, diced
  • 1/2 of a red bell pepper, diced
  • 1/2 cup red onion, diced (or about 1/4 of an onion; I wasn't precise)
Mix all of the ingredients together in that medium bowl and let it sit at room temp for about 30 minutes before serving.

  1. This looks delicious. I want to make a batch soon! My deli counter side is probably pasta salad. This week I made my own tuna noodle pasta salad - not sophisticated but so delicious. I add lots of lemon juice, craisins, chopped green olives.

  2. This looks great! I will definitely try it. My favorite deli side dish is NewPi's curried tofu and the dolmas. I love their whiskey sour pickles, too. I would like to try to make something similar this summer.

Hello! I would like to share my personal experience in study. I've just got finished the technical college and like almost all of learners tried to combine the studying and a part-time work, but if you know, it's so tight to be in two places at the same time and to study well. But pro authors from online agency helped me a lot to made my studies so much easier than ever. You can click on their online thesis writing assistance webpage if you would like to be the greatest student in all your college subjects.

  5. I was married for 16 years to a loving mother and wife. We had 2 children together who are now 11 & 13. I reconnected with an old girlfriend from college on Facebook and we began an affair and I left my wife. The woman I had an affair with is a wonderful woman and I love her too and our kids had begun accepting the situation and my wife has kind of moved on, but not in love with the man she is seeing. I thought I fell out of love with my wife and I felt terrible about what I did to her - she is a good woman and I don't know what came over me. I decided to try and get her back and I was recommended to Lord Zakuza for help to get reunited with my wife and within 48 hours after I made contact with Lord Zakuza my wife decided to work things out with me and now we are back together with our children living as one happy family. I really don't know the words to use in appreciation of what Lord Zakuza did for me but I will say thank you sir for reuniting I and my family back.
