When I am in the mood for a culinary luxury, I head to the deli cooler case at my favorite food co-op. They have so many fresh salads and side dishes, as well as heat-and-serve main dishes. Because our local co-op uses fresh, local, non-gmo, organic ingredients we know we are consuming the best quality foods that also taste amazing. (Read their Quality Standards here)
So, yeah, I'm sure you can see why this is a 'culinary luxury' for us. We are a frugal couple, which means these treats aren't in our budget each week.
One of my favorite side dishes from our food co-op is a Sante Fe Corn and Black Bean Salad. We can purchase a pint (or so) for about $7. This is a little steep for me, but it's sooooo delicious. Spicy, savory, fresh, and with enough fiber to fill us up.
Our co-op is a member of a larger food co-op organization, and some of their recipes are listed online. I was really happy to find the Sante Fe Corn and Black Bean salad online. I made just one tweak to the recipe to fit our tastes, and was amazed that it indeed tastes just like the salad from our co-op's deli cooler.
Here's the original recipe, and here is my slight adaptation -
Whisk the following together in a medium sized bowl:
- 1/8 cup olive oil
- 1/4 cup fresh lime juice (do not use bottled; you will regret it)
- 2 T chopped fresh cilantro
- 1 tsp ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (while this is optional, we highly recommend it)
- 2 cups black beans (canned or dried, as long as they've been cooked through)
- 1 cup corn (we used frozen from last summer's garden)
- 1/2 of a green bell pepper, diced
- 1/2 of a red bell pepper, diced
- 1/2 cup red onion, diced (or about 1/4 of an onion; I wasn't precise)
Mix all of the ingredients together in that medium bowl and let it sit at room temp for about 30 minutes before serving.
