Brown Baggin' It Never Tasted So Good: Garlic, Mushroom, Broccoli and Noodles

Since John is traveling for work during the week, I usually spend a considerable amount of time on Sunday making lunches for both of us to take to work throughout the week. While it is a lot of work, I do enjoy it.

I also enjoy cooking with new spices and rubs form Raw SpiceBar. In March I received a shittake mushroom powder.

I had no idea what to do with it. 

Thank goodness for the complimentary recipes in each Raw SpiceBar delivery. They are beautifully printed on a glossy card stock in a perfect size for your cookbook or recipe box. I decided to take Raw SpiceBar's lead on this one, and made a delicious, spicy stir fry for our weekday lunches.


First, gather these ingredients:

  • 1/2 T of Raw SpiceBar Shittake Mushroom Powder
  • 1/2 lb. of buckwheat noodles
  • 1 lb broccoli florets (fresh)
  • 2 T peanut oil
  • 6 oz portabella mushrooms, sliced
  • 1 inch of ginger, diced
  • 1/2 tsp. red pepper flakes
  • 1/2 c. vegetable stock
  • 3 T coconut aminos
  • 1/4 cup sliced onion
  • 2 cloves chopped garlic
  • a couple green onions for garnish

Directions:

  1. Blanch the broccoli for a minute and set aside. 
  2. In a separate pot, cook the buckwheat noodles according to package directions, then set aside. 
  3. Heat the peanut oil in a large skillet over med-high, then add mushrooms, shittake powder, garlic, ginger, onions, and red pepper flakes. Cook until fragrant. 
  4. Reduce heat to medium, then add the blanched broccoli, broth, soy sauce and bring to a boil. Reduce to simmer for 1-2 minutes until broccoli is a little more tender. 
  5. Add the buckwheat noodles and toss with tongs. 
  6. Garnish with green onions, then enjoy!
