Mostly Homemade Mondays - Week 134 + URBAN HOMESTEAD MEAL PLAN!

Are you ready for this week's meal plan and blog hop? Remember, in the meal plan some items are bolded, which indicates a homegrown or local item from our urban homestead. We have leftovers for lunch, and we rarely have desserts. Many times on weekends our lunches include eggs from the ladies. 
  • Monday - Cheese quesadilla with tortilla chips and homemade guacamole
  • Tuesday - Scrambled eggs with pepper and onions, and fresh fruit
  • Wednesday - Beef enchiladas with a salad from the garden
  • Thursday - Homemade beef, onion, and mushroom pizzas on naan bread
  • Friday - I have dinner with my girlfriends planned, so John is on his own. 
  • Saturday - Grilled, peach-glazed ham steak with a salad from the garden
  • Sunday - Dinner at church

  1. Wow, what an honor, thank you. We really thought we'd have the ugliest coop in the state when we started, but it didn't turn out too bad, eh?
    Also, I haven't tried beef, onion and mushroom pizza before. What are you using as a base (cream of mush soup & mozzarella?). I didn't see a link to a recipe, and I'm always looking for a new pizza recipe :-) .

    1. The base is our tomato sauce with basil, and we use Naan bread (from Aldi) as the crust. Toppings are mozzarella, beef, onion, and mushrooms. Totally simple! The Naan bread rocks it, though.
