I can't wait for my summer garden. Not only do I feel a little more in touch with my real self (digging in the dirt does that to a girl, I promise you), but there's no better satisfaction than eating a meal made with ingredients picked from your backyard.
You know what I mean, don't you?
One of my favorite garden meals is a BLT sandwich, with tomatoes and lettuce from the garden, and bacon from a hog on my parents' farm. I like to add some flair to my BLTs, though. I add a slice of cheese, some onion, maybe a few cucumber slices.
This tasty sandwich spread will easily replace the mayo on my toasted homemade bread, which is the foundation of the BLT. Here's the recipe for Avocado Sandwich Spread:
- 1 ripe avocado
- 2 tablespoons of homemade mayo
- 1 teaspoon of lemon juice
- 1 clove garlic, minced
- pinch of black pepper
After pitting and scooping out the avocado, place it and the rest of the ingredients in a small bowl and mash with the back of a fork.
Keep it chunky or make it creamy. Do whatever blows your skirt up, sister. Or brother. Whomever you may be.
Smear this spread all over the sandwich your heart most desires. At the moment, my heart was beating for a BLT (it always does).
