The Italian Dressing
Making a savory, spicy Italian salad dressing from scratch is simple, and all you do is dump the ingredients into a glass jar and SHAKE until mixed.
Here are the ingredients you'll need:
- 1 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 1 tsp salt
- 1 tsp sugar
- 1/4 tsp dried oregano
- 1 tsp yellow mustard
- 1/4 tsp paprika
- 1/4 tsp dried minced garlic
Then, just dump the ingredients into a glass jar (I used an glass salad dressing bottle, but you could use a canning jar) and shake until blended.
You'll need to shake the dressing before using, because the oil will separate from the other ingredients. I'll store this for about 2 weeks, but with all the lettuce coming from our garden we'll probably run out before then.
Editor's Note: I've made this recipe many, many times since publishing it in July of 2011, and each time I've been happy with the results. Sometimes I add a bit more sugar for a sweeter dressing, or less a different vinegar for a different flavor. No matter what I've tried, we love this recipe, especially over greens from our garden.
