Recipe Keeper #7: Carbonara Pasta

I know I've shared a few Gramma Jan recipes before, but I've gotta say, grams can cook! I don't have a whole lot of time to write a length post today, but real quick: Here's her recipe for Carbonara Pasta, which she made for us for the first time a few years ago when we were visiting her in Wisconsin.

Gramma Jan's Carbonara Pasta
You'll need:
1/4 lb. of mild Italian sausage OR thinly sliced ham OR bacon (I chose sausage.)
4 T butter
8 oz. of pasta, cooked in salted water (Gramma Jan and I chose bow-tie pasta)
1/4 c. of diced onion
1/2 c. grated parmesan cheese
2 T. butter (yes, more...)
Parsley flakes
3 eggs

Directions:
Cook the meat and onion in a skillet.
Cook the pasta according to directions, drain and add to cooked meat.
Beat three eggs and all at once into the hot meat and pasta. Mix well. The hot meat and pasta will cook your beaten egg.
Sprinkle in the parmesan cheese and parsley flakes.
Eat.

Gramma Jan's note on this recipe says, "[smiley face] I like it best with diced fried bacon, with onion and garlic. Grandma Jan"

As John would say, "Bacon is the fairy dust of food."You can't go wrong with bacon. Ever.
